Olive Garden
Eggplant Parmesan

1 Tbls. olive oil
2 Tbls. lemon juice
1 eggplant (about 1 lb.), unpeeled, sliced 1/4 inch thick
2 cans tomato sauce (8 ounces each)
1 can (14 1/2 ounce) tomatoes, drained and chopped
2 cloves garlic, minced
1/3 cup fine dry bread crumbs
1/4 cup grated Parmesan cheese
1/2 cup part skim ricotta cheese
1/4 cup shredded part skim mozzarella cheese (about 1 ounce)

Slushy Punch
Ingredients:
3 cups water
1 cup sugar
2 ripe medium bananas, cut up
3 cups unsweetened pineapple juice
1 6-ounce can frozen orange juice concentrate, thawed
1 6-ounce can frozen lemonade concentrate, thawed
2 tbsp lemon juice
1 28-ounce bottle carbonated water, chilled

Canning fresh green beans

I rinse my fresh green beans in cold water several times no need to dry them as they are going to get fully cooked in the canning process.
