
Eggplant Parmesan
1 Tbls. olive oil
2 Tbls. lemon juice
1 eggplant (about 1 lb.), unpeeled, sliced 1/4 inch thick
2 cans tomato sauce (8 ounces each)
1 can (14 1/2 ounce) tomatoes, drained and chopped
2 cloves garlic, minced
1/3 cup fine dry bread crumbs
1/4 cup grated Parmesan cheese
1/2 cup part skim ricotta cheese
1/4 cup shredded part skim mozzarella cheese (about 1 ounce)
