Ingredients:
4 potatoes (peeled and chopped into 1-inch cubes)
1 (16-oz) package kielbasa sausage (cut into 1-inch pieces)
1 onion (chopped)
2 green bell peppers (chopped into 1-inch pieces)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup vegetable oil

Why would I bring this up when clearly this recipe is “Almond Crunch?” It’s because this unpleasant event happened to me after eating a combination of pasta, in an alfredo sauce (super rich) then eating a fair amount of this luscious almond crunch. But don’t be afraid; although the almond crunch itself is rich, it won’t make a fast exit unless you pair it with an additional fat bomb, like say alfredo sauce. Enjoy this rich, easy holiday treat.

Filling Chicken Bake
You will need 2 boxes of chicken stuffing, a can of cream of chicken soup, 2 egg whites, 2 chicken breasts, a pat of butter substitute, 1 bag of egg noodles and 2 cans of chicken broth. First grill your chicken breasts and then cut into bite sized pieces. Add the egg whites, chicken broth and cream of chicken soup to a baking pan. Mix these together well. Cook the two boxes of chicken flavored stuffing by following the directions on the box. Add the chicken breast pieces into the mixture in the baking pan along with the egg noodles and butter pat and mix well. Spoon the stuffing over the top of the entire pan and spread out evenly so that the entire mixture is covered. Bake at 425 for 30 minutes and allow to cool before serving.

Spring – Orange Beef Stir Fry with Broccoli
Ingredients:
1 1/2 lbs beef sirloin, thinly sliced
8 broccoli florets, lightly steamed or blanched
2 tbsp frozen orange juice concentrate
1 tbsp soy sauce
1/3 cup white sugar
1/3 cup rice wine vinegar
2 tsp orange zest
3 tbsp grated fresh ginger
1 tsp salt
1 cup long grain rice
2 cups water
1/4 cup cornstarch
1 1/2 t tbsp minced garlic
2 tbsp peanut oil for frying
