How to Make Coriander Beef

Ingredients for the coriander beef recipes:
500g (1lb) rump steak, cut into thin strips
4 cloves garlic, finely chopped
1 tablespoon finely chopped fresh ginger
1/2 cup (25g/ ¾ oz.) chopped coriander roots, stems and leaves
1/4 cup (60ml/2 f oz.) oil
oil, extra, for cooking
2 red onions, thinly sliced
1/2 red capscicum, thinly sliced
1/2 green capscicum, thinly sliced
1 tablespoon lime juice
1/2 cup (25g/ ¾ oz.) chopped coriander leaves, extra
Directions for the coriander beef recipes:
1. When you want to start cooking the coriander beef recipes, you should follow these guidelines. First, place the beef strips in a glass or ceramic bowl. Add the garlic, ginger, coriander and oil. Mix together well, then cover and refrigerate for 1 – 2 hours
2. Heat the wok until very hot and stir-fry the meat in three batches over high heat for 2 – 3 minutes, or until the meat is just cooked. Remove all al the meat from the wok and keep it warm.
3. Heat 1 tablespoon oil, add the onion and cook over medium-high heat for 3 – 4 minutes or until the onion is slightly softened, Add the capsicum, and cook, tossing constantly, for 3 – 4 minutes, or until capsicum is slightly softened,
4. Return all the meat to the wok with the lime juice and extra coriander. Toss well, then remove from the heat and season well with salt and cracked black pepper. Serve immediately.
